Tammy's Coconut Flour Pancakes

What's more American than hot off the griddle fluffy pancakes for breakfast? These pancakes have just the right amount of crispiness on the outside and light and fluffy on the inside.

INGREDIENTS:

3 large eggs

1/4 cup unsalted butter 

1/4 cup Coconut Flour 

1/4 cup heavy cream

3 teaspoons of Sukrin:1 

3 teaspoons of Sukrin Gold Brown Sugar Alternative 

1/2 teaspoon vanilla extract 

1/2 teaspoon baking powder 

 

METHOD:

Whisk together butter, cream, Sukrin:1, eggs, vanilla, and Sukrin Gold. Once the ingredients are blended together, add in the coconut flour and baking powder, and salt to taste. Whisk all together until batter becomes thick. You may have to wait 5-10 minutes. Oil your griddle and turn on medium heat. Spoon batter out with a 1/4 measuring cup and pour onto your heated griddle or skillet. 

Keep an eye on the pancakes as little bubbles won't be forming as regular pancakes do.  About 1-2 minutes on each side should be good.  Use a spatula to remove the pancakes. Serve with butter and Sukrin Fiber Syrup Gold

Makes 12 smaller pancakes or 8 medium size pancakes. 

Tip: These pancakes are easier to flip if you keep them smaller. You can double the batch if you need more.
