Sea Salt Nut Butter Cookies (Low Carb)

I LOVE nut butter. Simple, organic nut butter, mixed with the richness of Sukrin Gold brown sugar... well, the taste is almost sinful! But it's NOT!  

Nut butter in the form of soft and chewy cookies that are crisp on the outside, chewy on the inside and finished off with a hint of salt? Nothing beats that.

Well, nothing except for the fact that these cookies are less than 1 gram of carbs each and are super fast and easy to make!

INGREDIENTS:

1 cup of Hazelnut butter or Apricot Kernel Butter 

3 Tablespoons of Peanut Flour 

¼ cup of Sukrin Gold

1.5 ounces of butter, softened

2 eggs

Sea salt


METHOD:

Pre-heat oven to 350° F

Place all of the cookie ingredients into the bowl of your stand mixer and beat until combined.

Place heaped teaspoons of the mixture onto lined baking trays.

Roll each spoonful into a ball and then flatten each one with a fork, creating a criss-cross pattern.

Scatter sea salt over the tops.

Bake for 15-20 minutes.

Remove from the oven and let cool on a rack.


Store, in an airtight container, in the pantry for up to one week.
