Delicious low carb penne is paired with a decadent cheese sauce to create the best mac and cheese that you’ve ever eaten.

INGREDIENTS:
1 package of Liviva Penne Pasta
Cheese Sauce:
8 ounces of cream cheese, softened
8 ounces of ricotta
1 egg
¼ cup of finely grated parmesan
½ cup of shredded mozzarella
½ cup of pork rind crumbs
METHOD:
Pre-heat oven to 350° F, fan forced
Prepare the Penne to package directions.
Place the cream cheese and ricotta into the bowl of your stand mixer and mix on med-low until creamy and well combined.
Add the egg, half of the mozzarella and parmesan and mix until a smooth sauce is created.
Combine the Penne with the cheese sauce and spoon it into your baking dish.
Combine the pork rinds and the parmesan in a small bowl.
Sprinkle the crumb mixture over the top and then bake for 20 minutes.
If the top isn’t browned enough for your tastes, pop it under the broiler for a couple of minutes to finish it off.
This will keep, covered in the fridge, for approx. 5 days.
It can also be portioned out and frozen.
