I am crazy about this PEACH COBBLER! The peaches shine through the flaky cobbler topping with their sweet and juicy flavors. The Sukrin Gold gives this cobbler that RICH, golden brown sugary warmth that literally melts in your mouth. 

Luscious slices of peach, delicately spiced and topped with a delicious crumbled topping…and under 8 grams of carbs per serving! And you can even share it 8-ways, cutting the barbs per serving to 5.7g. You’re so welcome.

 INGREDIENTS:

Filling:

2 cups of peaches, either fresh sliced or canned (make sure that they’re in a sugar-free solution)

2 Tablespoons of Sukrin Gold

½ teaspoon of cinnamon

1/8 teaspoon of nutmeg

1 teaspoon of vanilla


Topping:

1 egg

1 cup of almond flour

¾ cup of coconut flour

2 Tablespoons of Sukrin:1

2 Tablespoons of Sukrin Gold (or more)

1.5 sticks of butter, softened

1 teaspoon of vanilla


METHOD:

Pre-heat the oven to 375⁰ F

Place the peach slices and the rest of the filling ingredients in a large bowl and toss gently until the peach slices are all coated.

Arrange in the base of a dish.

Beat the egg, butter, sweetener, and vanilla together until fluffy.

Add the dry ingredients and beat until a loose dough forms.

Place the dough in pieces over the peach filling and press down firmly.

Bake for 25 minutes until browned and crisp.

Serve with keto ice cream.

Store, covered, in the fridge for up to three days.
