This cake mix contains Sukrin instead of sugar, and we’ve replaced part of the flour with fat-reduced almond flour and FiberFin. The result is a delicious low-carb and low GI cake.
Below we made a round chocolate cake, cut it through and put raspberry jam and whipped cream between the layers. Covered in whipped cream and decorated with fresh raspberries, this is a cake fit for any occasion.
Please note that the chocolate cake mix, unlike all of our other mixes, still has regular flour - just significantly less than a regular chocolate cake mix.
Baking Mix makes it easy to bake delicious cakes and desserts that are both gluten- and sugar-free. Just add your favorite flavorings and let your imagination do the rest; chocolate cake, sponge cake, scones, waffles, pancakes - the list is endless!
Baking Mix is probably the most versatile of the mixes. A few ideas for creations are:
Mix a box of Baking Mix with just short of one stick of cold, diced butter. A food processor is ideal for this purpose. Add 2 eggs, 2.8 oz of quark/sour cream and whatever tickles your fancy out of chopped nuts, chocolate, raisins etc. Shape into scones and bake for 15 min. at 390 degrees Fahrenheit.
Mix a box of Baking Mix with 4 large eggs, 5.1 fl oz water, and 3.4 fl oz oil. Stir into an even batter and pour into a greased cake tin. Place the cake in the oven and bake for approx. 20 min. at 350 degrees Fahrenheit. In the meantime, brown 1 T of butter, 2 T of chopped almonds, 3 tbsp. of Fiber Syrup Gold and ¾ tbsp. of your flour of choice in a saucepan. After 20 min. of baking, spread the nut mixture over the cake and bake for another 15 min.
Mix a box of Baking Mix with 4 eggs, 5.1 fl oz water, and 3.4 fl oz oil. Pour approx. 1/3 of the mixture into a separate bowl and add 2 T of cocoa powder and 2 T of Sukrin Gold. Place the mixture in layers, light-brown-light, into a greased bread tin. Make the marble pattern by pulling a knife through the batter at the end. Bake at 350 degrees Fahrenheit for approx. 35 min.
